Liquid freezing is a method used recently in cherries and vegetables. It helps to maintain them in a state similar to that at the time of harvest (preservation of freshness). Fruits and vegetables that have been subjected to wet cooling do not wither, wrinkle, and lose their aroma and flavor. The cherry cooling machine consists of a closed metal "cooling tunnel". This is a device for cooling fresh produce. Cooling is carried out by cold water recirculation. The water is guided by means of a pump arrangement in perforated pans from which it falls into fruit containers. The area where the water is cooled by two sprays receives two pallets. The device is equipped with one remote-controlled automatic door and one pump. The cherries come in plastic boxes and pallets, a forklift truck places the pallets inside the machine. The door closes and there is sprinkled with ice water of about 0.5 CO, then we open the remote control door and pick up the pallets with a forklift truck. There are two separate cooling chambers one for each pallet. Each chamber has its own automatic door and its own pump, while the tank receiving the water pumps are common to both chambers. The two chambers are separated by insulating panels. So if we want to cool a pallet we will only operate one chamber. Whereas when we work on both chambers and want to receive one pallet because the cooling time is over, the second pallet continues to cool.
